By 26, he opened Restaurant Story, using the power of food to tell a story, spark conversation and make people smile. A no compromise mentality on the use of premium produce, seasonality and provenance of ingredients. Within five months of opening it was awarded a Michelin star, one of the youngest to ever be awarded such an honour. Now considered the new norm, setting the bar for others, taking a path others would not even see to take.
In 2016, Tom was named by Forbes as one of the ’30 under 30’ as a prodigious talent in the arts sector and his debut book, A Kind of Love Story, was published in 2016 by Orion. In 2017, Evening Standard Magazine named Tom in the ‘Progressive 1,000’ – a list of the most influential Londoners.
